You shouldn’t always play with your food, but for dishes like these, then absolutely go for it! Get creative with classic recipes by turning them into something festive with minimal effort. Cookie cutters make that easy. Use any shape to fit your theme, but if you’re trying to make something romantic and cute, little hearts are a must! Use the cut scraps to throw on a salad or eat with bread. I know you would never let fresh mozzarella go to waste. :)

Ingredients:

  • 16oz. Belgioioso Fresh Mozzarella, sliced

  • Small handful of fresh basil leaves, sliced

  • ½ pint cherry tomatoes, quartered

  • 1 clove garlic, minced

  • Salt and pepper

  • 1-2 tbsp extra virgin olive oil

  • Balsamic glaze

  • 1 box frozen  Athens Phyllo Shells (15 shells)

Instructions:

  1. Use a heart-shaped cookie cutter to cut out a heart on every slice of the mozzarella. Set aside. Save the scraps for another use. Refrigerate until ready to use.

  2. In a small mixing bowl combine: cherry tomatoes, fresh basil leaves, garlic, drizzle of olive oil, sprinkle of salt and pepper. Gently toss to combine, taste, if it needs more salt then add some to taste. Cover and refrigerate until you are ready to fill the shells. To avoid the shells from getting soft, fill them before serving.

  3. When ready to serve shells- Remove phyllo shells from the freezer. Take them out of the box then remove the plastic. Keep them in the container while you fill them. Toss tomatoes then place a small amount in each shell, about 3 quartered pieces. Make sure to get a piece of basil in there as well for flavor and color. Place the heart-shaped mozzarella on top of each shell. Then, drizzle with balsamic glaze. Serve immediately.

  4. Use any extra tomatoes or cheese over a salad or toss together for a light snack.
