Cherry Chia Jam

Jam is one of those ingredients that can be in a variety of recipes. Whether it’s for a simple pb&j sandwich or a marinade for grouper, you can always appreciate it for anything. I love how it also can be in a variety of flavors. The trap with most store bought jams is that it’s either loaded with sugar or contains a list of unnecessary ingredients. Making homemade jam is delicious, versatile and in most cases, can be healthier. Although making jam at home isn’t difficult, it can be a process. However, using chia seeds can be the shortcut you’re looking for. When chia seeds are soaked in a liquid they become gel like. So when you pair that with your mashed fruit, it’s just as if you’ve created a fruit jam with minimal effort. I absolutely love cherries and keeping them frozen is always helpful as well. This recipe is super easy and chia seeds add health benefits like omega-3 fatty acids, protein, antioxidants and fiber.

Ingredients:

  • 1 15oz bag frozen cherries

  • 3 tbsp chia seeds

  • ½ lemon, juiced

  • 1 cup water

  • 1 tbsp maple syrup

Instructions:

  1. Empty the frozen cherries into a small saucepan, then add no more than 1 cup of water. Cook over medium heat and let it come to a light boil. Stir and mash frequently. Try to mash and break up the cherries as it boils and some water evaporates.

  2. Then once it’s mashed and cooked down a bit (this part is under 15 minutes), then add the lemon juice and maple syrup. You can add more syrup if you would like it sweeter. Stir to combine, then turn off the heat.

  3. Stir in the chia seeds and let cool. It thickens as it cools. Once it has cooled completely, transfer into an airtight container and keep in the fridge for up to two weeks. You will notice after being in the fridge for at least two hours it will help thicken it as well. If you notice the next day that you’d actually like it thicker, you can alway add a little more chia seeds.
