Air Fryer Coconut Chicken Tenders
Chicken tenders are such a great to-go protein option for dinner on busy weeknights. They are quick, easy and healthy. Once you add the air fryer to the mix it steps them up another notch! However, maybe you’re in a great, healthy clean eating routine but you’re getting tired of plain grilled chicken. Well I have a great solution for you. Although, if you don’t like coconut, I apologize in advance! To switch up your boring grilled chicken for something just as healthy but with more flavor and texture, bread them in shredded coconut! Typically coconut crusted items do have some type of flour or breadcrumbs. If you are trying to stay clean, I promise shredded coconut only is still delicious and works lovely! So skip the extra calories and stay low-carb or gluten-free with this coconut only recipe! Oh and I almost forgot, the Greek yogurt dipping sauce is incredible! It’s fat-free Greek yogurt packed with protein, then flavored with fresh lime juice and zest, but the best part is the punch of heat from habanero hot sauce.

*Do not use aerosol oil sprays with the air fryer.
Ingredients:
6 chicken tenders
1 ½ cups shredded sweetened coconut
½ cup milk
1 egg
¼ black pepper
½ tsp salt
Coconut oil spray (or another type of oil)
Yogurt Dipping Sauce:
1 cup plain Greek Yogurt
1 lime, zest and juice
1 tsp habanero hot sauce (or another favorite)
Pinch of salt
Instruction:
In a mixing bowl, whisk together: milk, egg, salt and pepper.
Place chicken tenders in the egg mixture then set aside.
Place shredded coconut on a plate. Take one chicken tender at a time and place it on the shredded coconut. Use your fingers and a fork in the other hand to evenly coat the chicken with coconut. Press firmly as you coat to ensure the coconut sticks. Once the tender is covered, place on another plate that is set aside. Continue that process until all the chicken is used up.
Preheat the air fryer by letting it run for 5 minutes.
Depending on the size of your air fryer, either place all 6 tenders in the basket or work in batches of 3 at a time.
Cook at 360 for 10 minutes.
Transfer to a serving platter with yogurt dipping sauce.
For the yogurt sauce- stir all ingredients together until smooth and well combined.
