Eggplant Pizza Bites
The marriage of tomato sauce and cheese always equals comfort, especially when it’s on bread or pasta. What if you are looking for a gluten-free or just a light version while still getting all that comfort in every bite? Then use them over a veggie! Eggplant slices are great for ideas like that. You can easily make this recipe in the oven if you don’t have an air fryer. I love making these in the air fryer because it is quick, easy and crisps up the slices wonderfully. Remember… don’t skip the important step of “sweating” the eggplant slices before cooking (explained below). I love these for nights you are looking for a meatless option or just something light and healthy. They also make great appetizers or snacks.

Ingredients:
1 eggplant
Salt
1 cup marinara sauce
1 cup mozzarella cheese, shredded
Fresh basil leaves, sliced
Parmesan cheese, grated
Olive oil
*Preheat your air fryer for 3 minutes before using it. Simply plug in, turn to desired temperature then start it with a timer for 3 minutes. Once the timer is up, add food and begin air frying process.
Instructions:
Slice eggplant into ½ inch circles. Sprinkle each side of every slice with salt, then place in a strainer with a plate or something heavy on top to apply some weight. Let sit in the sink for 30 minutes while the eggplant “sweats” excess water out.
In the meantime, shred the mozzarella and slice the basil, set aside. Place a cup of sauce and grated parmesan in your workspace.
Once the 30 minutes is up, place all the slices of eggplant on the cutting board and pat dry. Use a pastry brush to lightly coat both sides of each slice with olive oil. Instead of brushing it on you can use an oil spray (not an aerosol spray). Place in the air fryer in a single layer (you will need to work in batches). Depending on how big your air fryer is will determine how many you can cook at once.
Turn air fryer temperature to 400, then set the timer/cook for 8 minutes (times can vary depending on models of air fryer and thickness of slices). If you desire your slices to be softer or crispier, simply cook for 2-4 minutes longer once the first 8 minutes is over.
Once they eggplant is cooked, carefully pull out the canister of the air fryer and set aside. Use a spoon to carefully place some marinara on each slice. Then sprinkle a little mozzarella on each slice and finish with fresh basil. Air fry at 400 for another 2-3 minutes or until cheese is melted and bubbly. Remove from air fryer and transfer to a serving plate. Garnish with grated parmesan cheese and if desired, fresh basil.
Continue your next batch until all the eggplant is used.
