Air Fryer "Grilled" Chicken Nuggets

This is probably one of the recipes I made the most in my air fryer. This has been a typical quick chicken to-go of mine for years now, but I always have done this on the stove. Now that I have an air fryer, I only cook this that way! It is just so much more convenient. I don’t have to watch the chicken on the stove and there is less of a cleanup. Plus, the little added crispiness is so much better! I never got that when I did this chicken on the pan. I also mix up the seasoning for what I am in the mood for that day. If you don’t want to use the seasoning I have listed below, then play with your own combination. Maybe you just want to add taco seasoning that day because you’re planning to make a chicken taco salad. Play and let the ideas run endlessly!

Ingredients:

  • 2 chicken breasts, cut into little cubes

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp salt

  • ½ tsp ground black pepper

  • Dried lemon peel or fresh lemon zest

Instructions:

  1. Preheat air fryer for 3-5 minutes.

  2. Place chicken in a mixing bowl.

  3. Drizzle with olive oil, then sprinkle all spices and lemon over chicken. Toss well to combine.

  4. Place in air fryer in a single layer. Cook for 8 minutes at 380.

  5. Remove from air fryer, if you have another batch to throw in, cook next batch. Then serve warm with your favorite dipping sauce.
