Naked Buffalo Bites

This recipe isn’t very fancy but I love how it is a much “skinnier” version of buffalo tenders and ranch dressing! It’s also so fast and incredibly easy. Turning plain Greek yogurt into a “ranch dressing” is my favorite part. It is so much healthier and you’d be surprised just how great it is! Skipping out on the breading and frying the chicken cuts a lot of calories as well, making this the lighter, skinnier version it is.

Ingredients:

  • 1 cup buffalo wing sauce

  • 4 skinless, boneless chicken breasts, cut into bite sized chunks

  • Celery, cleaned and cut

Homemade Skinny Ranch Dressing:

  • 1 cup plain Greek yogurt

  • ½ lemon, juiced

  • ¼  teaspoon dried dill

  • Pinch/sprinkle of: salt, black pepper, garlic powder, onion salt, dried thyme, dried parsley

Instructions:

  1. Toss chicken in the buffalo sauce. Set aside, or if not using right away, cover and refrigerate for an hour or overnight.

  2. Preheat oven to 375. Line a baking sheet with parchment paper and spread pieces of chicken out into a single even layer.

  3. Bake for 20-25 minutes.

  4. In the meantime, clean and trim your celery, set aside.

  5. Make your skinny ranch dressing. Mix all the ingredients in a small mixing bowl. If you’d like to make the dressing thinner, squeeze the remaining half of the lemon for more juice.
