Layered Greek Dip

Everyone appreciates a good dip. There are endless recipes out there of some amazing party dips. Layered dips are usually a crowd pleaser, and there are many variations. I love to create layered dips with meditterean flavors. Using Greek inspired ingredients always turns out to be a crowd pleaser. I love how all the flavors are so fresh tasting while also being on the healthier side. For being a dip that is light, fresh and simple, it sure is packed with tremendous tastiness!

Ingredients:

  • 1 container of feta cheese, crumbled

  • About 2 cups of plain hummus

  • About 2 cups of plain Greek yogurt

  • 1 small jar of marinated artichokes, chopped

  • 1 cup of cherry tomatoes, sliced in half

  • ½ - 1 cucumber (1 cup chopped)

  • 1 cup of pitted Greek olives, chopped

  • 6 stuffed grape leaves

  • Handful fresh parsley, chopped

  • Dried oregano

  • Salt

  • Pepper

  • Olive oil

  • Pita chips

Instructions:

  1. Clean tomatoes and cucumber. Slice tomatoes and place in a small mixing bowl. Sprinkle with salt and pepper, then set aside. Chop cucumber and place in another small mixing bowl. Sprinkle with dried oregano, salt and pepper. Drizzle a little olive oil, then gently toss to combine, set aside.

  2. Chop the artichokes, then the olives, set them aside.

  3. Using a 9x13 baking dish, start layering: spread the hummus into an even first layer. Then spread the yogurt onto the hummus into another even layer.

  4. Evenly sprinkle in this order: artichokes, tomatoes, cucumbers, olives, feta cheese, parsley.

  5. Drizzle with olive oil, then garnish with the grape leaves.

  6. Cover and keep refrigerated until ready to serve.

  7. Serve with pita chips.
