Roasted Balsamic Broccoli

Roasting broccoli in the oven is my favorite way to eat it. I always start dressing it with olive oil, salt and pepper. Some days, I’ll squeeze fresh lemon juice over the broccoli, others I’ll sprinkle with parmesan cheese. This time I decided to use balsamic vinegar. The balsamic caramelized, created a sweet flavor in every crunchy bite! Simple goes a long way.

Ingredients:

  • 1 head of broccoli, cleaned and cut

  • Olive oil

  • Balsamic vinegar

  • Salt 

  • Black pepper

Instructions:

  1. Preheat oven to 450.

  2. Line a baking sheet with parchment paper, then lay the broccoli out into a single layer.

  3. Drizzle with olive oil, then the balsamic. Sprinkle with salt and pepper.

  4. Bake for 20 minutes.
