Cannoli Ice Cream

Ok this was honestly...unlike anything I've ever had. If you make ice cream at home or want to try and you are a fan of ricotta, cannoli, or anything amazing...THIS.IS.A.MUST. Especially all you dessert and ice cream lovers, it's life changing. The end.

(I did get the idea of using ricotta in my mixture for homemade ice cream thanks to a cooking class I just attended, so huge credit to chef Michael at our local Sur La Table). I then came home to experiment with ricotta based ice cream and decided I would create a simple cannoli inspired frozen treat :) Enjoy

Ingredients

  • 16 oz. Whole-milk ricotta cheese

  • 3/4 cup granulated sugar

  • 1 teaspoon Madagascar vanilla bean paste (or extract) I use the paste, it's amazing

  • Zest of 2 lemons

  • 3/4 cup heavy cream

  • 3 cannoli shells

  • 1/2-1/3 cup of dark chocolate chips

Instructions

  1. I used my Vitamix, but you can just as easily use a food processor to combine everything until it is smooth.

  2. First add, ricotta, sugar, vanilla extract, and lemon zest. Blend until smooth then add the cream and blend once more until well combined.

  3. Make sure your ice cream machine is ready to go, turn on, pour mixture in and let the machine do it's work. My machine takes 20 minutes, read your machine's instruction manual and follow it's directions.

  4. Once it is finished, stir in chocolate chips and transfer into an air tight container and keep in the freezer until read to serve.

  5. You can crumble the cannoli shell pieces and sprinkle over top or mix in.
