Healthy Banana Muffins

If you ever have a bunch of bananas that are going bad, that's great actually because you can make delicious homemade banana bread with them! That way they won't go to waste. Instead of my normal banana bread recipe, I wanted to share this healthy, flourless and butter/oil free version. Here is some good news about this treat besides being healthy...they are kid-friendly! I made a batch for my third grade students and all 23 of them loved the muffins! Believe it or not, there's more good news besides these treats being healthy AND kid-friendly...they are gluten-free! So a perk about making these for the students was I didn't need to worry about any gluten allergies. Everyone was able to enjoy these delicious treats! The kids asked for chocolate chips in the next batch :) Give this fast and easy recipe a try, they make a the perfect breakfast snack for on-the-go!

Makes 24 mini muffins or 12 regular

Ingredients

  • 2 ripe bananas

  • 2 1/2 cups uncooked old fashion oats

  • 1/2 cup brown sugar

  • 1 single serving container of vanilla Greek yogurt

  • 2 eggs

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp sea salt

Instructions

  1. Preheat oven to 350.

  2. Throw everything in a food processor or Vitamix and blend until smooth and consistent.

  3. Use muffin liners or grease a nonstick pan.

  4. Pour even amounts into each spot of the tray.

  5. Bake at 350 for 17-19 minutes
