Gigli & Ribs

There’s something special about cooking meat in the pan then using that sauce for pasta. Whether it’s veal, pork, beef or chicken, the juices and oils from the meat creates the most amazing flavors. Adding fresh herbs is also another lovely touch to these types of sauces for your pasta. You’ll always want to remove the meat from the pan then mix the pasta directly in the pan the meat was cooking in to fully soak up all the delicious flavors. Don’t forget to sprinkle on the freshly grated parmesan cheese!


Ingredients

  • 1 rack of ribs

  • 1 pound pasta (gigli, penne or rigatoni)

  • ½ yellow or orange bell pepper, chopped

  • ½ sweet onion, chopped

  • 3 cloves of garlic, smashed then cut in half

  • Olive oil

  • Chili pepper flakes

  • 1 tomato, chopped

  • Salt

  • Black pepper

  • Parmesan cheese

  • Optional topping- fresh parsley


Instructions

  1. Wash and slice all your veggies, set aside.

  2. If necessary, trim any fat from ribs, then slice them between the bones into individual pieces. Season with a sprinkle of salt and pepper. Set aside.

  3. Using a large pan, drizzle about 2 tablespoons of olive oil and heat over medium-high. Add chili flakes to your liking of spicy level. Once the pan is really hot add the ribs and cook a few minutes, rotating ribs until all edges are seared.

  4. Once ribs are seared all around, lower heat to low. Add tomatoes, garlic, bell pepper and onions. Season with salt and pepper, then drizzle 2 more tablespoon of olive oil.

  5. Cover and let cook on low heat for a total of 45 minutes. Start boiling pasta water.

  6. After 30 minutes, flip ribs then cover and continue to cook for another 15 minutes.

  7. Cook pasta until al dente, your pasta should be done by the time the ribs are ready.

  8. Once the ribs are complete, transfer ribs to a plate. Set aside and keep warm.

  9. Strain pasta then add to the pan with all the leftover sauce made from the ribs and veggies. Toss well to combine. Grate parmesan over top and serve immediately with ribs on the side
