Extra Creamy Carbonara

This pasta dish is one of the best. I know it's not the healthiest but let's not talk about that. Just make it, eat it and love it, please. I love making this for company. Especially, when it's a day I don't have much time because it is incredibly fast and easy to whip up. Besides that, it is ALWAYS a crowd pleaser. Throw some nice bread on the table, make a quick salad, and you're good to go. Everyone loves this flavorful and comforting dish, and they will love you more for preparing such an amazing dinner. You don't need to tell them how easy and effortless it was though :)

Try to time this so once it is done you serve and eat it right away rather than letting it sit. That's when it's best and most creamy. When reheating the leftovers from this dish, add milk or cream to get the sauce creamy again.

Ingredients

  • 1lb spaghetti

  • 1/4 pound chunk of pancetta from the deli, diced

  • 2 cups grated Parmesan cheese

  • 4 egg yolks

  • 1 cup heavy whipping cream, plus a little more to thin sauce if you need to

  • 1 tablespoon olive oil

  • cracked black pepper

  • fresh parsley, chopped


Instructions

  1. Start boiling water for pasta.

  2. Heat a pan with the olive oil and add diced pancetta, saute until cooked/crispy. Set aside and keep warm, you can drain some of the oil/fat.

  3. Add pasta to water and cook till al dente.
    In the meantime, in a mixing bowl add: egg yolks, 1 1/2 cups of Parmesan, 1 cup heavy cream and cracked pepper. Whisk together until combined but don't beat. (you can add a little salt, however, Parmesan cheese contains salt already and you will add salt to the pasta water, so you really don't need more, but it is a choice) Set mixture aside.

  4. Drain pasta and return to pot. Add cream mixture, stir. Add warm pancetta with some of the oil/fat from pan. Mix together until well combined, you may add more whipping cream if you need to thin the sauce out.

  5. Serve immediately, garnish with chopped parsley, sprinkle more Parmesan cheese and freshly cracked black pepper. Then, INDULGE in the creamy goodness and love it!
