Chicken Cutlet and Egg Sandwich

This deliciously satisfying breakfast will start your day right! It is a great way to use leftover chicken cutlets from dinner.

Ingredients

  • 1 chicken cutlet

  • 1 egg, cooked over easy

  • salt and pepper

  • mozzarella cheese

  • two slices of bread, lightly toasted

Instructions

Keep in mind this is a sandwich. So add whatever you like! Here's what I did:

  1. toasted thin whole wheat rounds

  2. reheated a chicken cutlet

  3. cooked an egg, over-medium, seasoned with salt & pepper.

  4. piled the two in between the whole wheat thins with some grated mozzarella cheese.
