Capocollo and Egg Bites
These eggs came out great and were so incredibly easy and fast. Even all of you who say "I can't cook," can make these, and if you can't...wait no, there's no reason why you wouldn't be able to do this (unless both your hands are broken, there are no excuses with this one!)
Ingredients
12 eggs
12 slices of capocollo
oregano
salt
pepper
olive oil
Instructions
Preheat oven to 350
Rub olive oil into each spot on the muffin tray
Place a slice of capocollo in each one, pressing into muffin space
Crack an egg into each spot
Sprinkle with salt, pepper and oregano
Bake for 20 minutes (if you want the yolk running, cook less, maybe 15-17 minutes? Keep an eye on it).
