Skor Banana Bread

I hate letting bananas go bad, however knowing you can use those bad looking ones for banana bread makes everything better! Using very ripe bananas makes banana bread much better and easier. They are easy to mash and stir into the batter, and most of the starch has broken down into sugar giving it the sweet banana flavor and aroma. If you have had a Skor chocolate bar and enjoy the toffee covered in milk chocolate, then you will love using these sweet additions of chocolate chips and toffee bits in your next loaf of banana bread for an extra treat. If you just want to make a class banana bread you can skip the chocolate and toffee parts of this recipe. 

Ingredients:

  • ¾ cup (1 ½ sticks) unsalted butter, room temperature

  • 2 cups all purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ¾ tsp salt

  • 1 ¼ cup granulated sugar

  • 3 large eggs

  • 3 cups mashed bananas, very ripe (about 6)

  • ½ cup toffee bits, plus ½ cup for sprinkling

  • ½ cup chocolate chips, plus ½ cup for sprinkling

  • 1 cup melted chocolate or 1 cup chocolate icing

Instructions:

  1. Preheat the oven to 350. Grease a 9 x 5 x 3 loaf pan (you may use a muffin tray, bundt pan or another type of baking dish, just adjust cooking times). Set aside. 

  2. In a medium mixing bowl, whisk together the dry ingredients: flour, salt, baking powder and baking soda, set aside.

  3. In a large mixing bowl or stand mixer, begin to beat the butter and sugar until creamy, light and fluffy. Add eggs one at a time and continue beating. On low speed, add the dry ingredients in three additions, alternating with two additions of banana. Mix until just combined. By hand, stir in ½ cup chocolate chips and ½ cup toffee bits. 

  4. Pour batter into the prepared pan. Bake until a toothpick inserted in the center comes out with only a few most crumbs attached. In a loaf pan it may take 60-70 minutes. Let cool for about 10 minutes in the pan, then turn over to remove from the pan and let cool completely on a wire rack. Once cooled, drizzle melted chocolate or chocolate icing over the top of the loaf. Sprinkle with the remaining chocolate chips and toffee bits.

  5. *To melt your own chocolate, place chocolate chips or chocolate pieces in a microwave safe bowl, then heat for 30 seconds at a time until it is smooth and creamy. Stir in between each 30 second round.
