Instant Pot Smokey Pulled Pork

Pulled pork in the Instant Pot is one of my new favorites. I have always loved making pulled pork by slow cooking it in my Crockpot, which is perfect when you're not home all day, and it always comes out great. Using a lean cut in the pressure cooker has been fantastic because it’s fast and simple! The lean cut is also healthier because it’s less fatty. Liquid smoke is a neat little addition because it adds just enough smokey flavor to feel like it came off a grilled or was smoked. If you don’t have this ingredient, you can easily leave it out.

Ingredients:

  • 3.5 pound lean boneless pork roast

  • 1 ½ cup of chicken broth

  • 2 tbsp liquid smoke

  • Favorite bbq sauce

Instructions:

  1. Trim any visible fat off the roast, then cut into 4 pieces.

  2. Place the trivet in the Instant pot, then pour the chicken broth and liquid smoke in the pot. Place the pieces of pork on the trivet. Close the lid, lock into place and make sure the valve is turned to the sealing position. Cook on high pressure for 45 minutes, then let naturally release.

  3. Once pressure is released, remove the lid then carefully transfer the meat onto a cutting board. Use two forks to shred the meat. Serve plain with leftover juice from the Instant Pot or toss the shredded meat in your favorite bbq sauce. 

  4. Serve with side dishes or on buns with your favorite coleslaw.
