If you haven’t tried cake in cone before, you NEED to try this recipe! Something about the batter baked into the cone, makes it SO much better than a regular cupcake. This recipe isn’t anything fancy. I don’t try to get all “Master Baker” over here, I literally whip up a boxed cake mix then pour the batter into cake cones, keep it simple. Kids love eating cupcakes this way! That’s when it all started for me, my mom always made these when we were kids. A bonus for kids, their hands don’t get dirty with icing while they try to eat them. Holding the cone makes a huge difference. You can make these on a baking sheet, but balancing the cones really is tricky when moving in and out of the oven. That’s why I like to use a mini muffin tray, it’s foolproof! A regular muffin tray can work, they might topple a little but it’s still much, much better than a baking sheet. Have fun with these, I promise you will!

Ingredients:

  • 1 box of Funfetti cake mix (or another favorite cake mix recipe)

    • Ingredients according to boxed cake mix

  • 2 cups icing

  • Sprinkles

  • 12-24 ice cream cones (cake cones)

  • 12 or 24 count muffin tray

Instructions:

  1. Preheat the oven to 350.

  2. Follow the ingredients on the back of the cake mix box or prepare your favorite cake mix recipe.

  3. Place one ice cream cake cone in each spot on a muffin tray. The batter will make 24 cones. Usually boxes of cones come with 12. If you are only making 12, there will be extra batter to make into cupcakes or a mini cake, your decision! Otherwise, use two boxes to make 24 cones of cake to use up all the batter.

  4. Fill each cone up to the line in the about ⅔ way up the cone (see picture). Any higher and the cake batter will overflow.

  5. Bake for 19 minutes or until a toothpick comes out clean when pricked into the cake.

  6. Let cool completely before icing!

  7. Spread on icing then top with sprinkles.
