Ain't No Laws When You’re Cooking With Claws! The best “basic” chicken you’ll ever have.

If you can cook with beer and wine, then why not White Claw? Some of you may love it, some of you may hate it. Some of you may be thinking, “This is a great way to use the White Claw flavors I don’t like!” Bottom line here is, it’s to tenderize the meat. Chicken like this cannot get any easier. Make this on a Sunday to have healthy, juicy and tender shredded chicken on hand for salads, quesadillas, wraps, or anything your tummy desires. If I just want basic, shredded chicken on hand for the option of using it for anything, I’ll use a little salt. If you’re wanting it all for quesadillas or tacos…use taco seasoning, get the picture? Even so, all the other great herbs, spices, and flavors in your quesadillas and tacos are more than enough, the chicken is juicy and tender it won’t need it! If you are watching your salt intake, don’t season it at all. Oh, and in case anyone is wondering, it does NOT taste like White Claw. Remember, the purpose and function of it here was to tenderize the meat. Have fun playing, cheers!

*Tip: use an electric hand mixer to shred the chicken right in the Instant Pot with all the leftover juice!

Ingredients:

  • 4 boneless chicken breasts

  • 1 can lime or grapefruit White Claw (1 ½ cups)

  • Seasoning- optional to what you’d like to use it for

Instructions:

  1. Place chicken breasts at the bottom of the Instant Pot, season with a sprinkle of salt or desired seasoning.

  2. Pour White Claw over the chicken. 

  3. Place lid on the Instant Pot, lock into place, make sure the valve is on SEALING.

  4. Cook on high pressure for 15 minutes, natural release for 5 minutes before quick releasing. Leave chicken in all the juice created from cooking.

  5. Turn off the Instant Pot. Then, Plug in your electric hand mixer and place directly into the Instant Pot. Begin to shred chicken in the juice made from cooking.

  6. Transfer all the shredded chicken and juice to a large bowl for storing, or let cool then place Instant Pot silicone lid to cover and store in the fridge until you want to use the meat.

  7. Use chicken hot or cold in salads or sandwiches.
