Roasted Chicken
Roasting bone-in chicken is always easy and flavorful. It’s a great way to prepare dinner for the family because you can get lots of chicken on one baking sheet and while it’s cooking, you get a nice chunk of time to do other things in the kitchen, for the kids, or around the house.
Use any seasoning you’d like, whether it’s your own blend or your favorite store bought seasoning, your choice. I love using Valerie’s, so if you’re able to find that brand, give it a try!
Ingredients:
2 split breasts
4 drumsticks
2 tablespoons Valerie’s Seasoning salt
1 tablespoon olive oil
Instructions:
Preheat oven to 425.
You can leave the skin on your chicken for extra juicy flavor. If you decide to remove it, use a paper towel to easily rip/pull off the skin. Place all the chicken in a large mixing bowl. Sprinkle with seasoning and olive oil. Toss and massage it all into the chicken, under the skin and all over until it is evenly coated.
Line a baking sheet with parchment paper. Place the chicken onto the baking sheet in an even layer.
Cook for 45 minutes. If you leave the skin on and want to finish with an extra crispy touch, turn the oven to broil. Carefully watch the chicken for about a minute or until desired crispiness. Be careful not to burn during this part or leave in too long. It will burn and overcook.
Serve with rice, veggies, potatoes, fries, salad...whatever you’d like!
