Pumpkin Spiced Pancake Bites

I loved using a pancake batter and the Instant Pot’s egg mold to create pancake bites! Trader Joe’s is known for having so many great pumpkin flavored options so why not use their pumpkin pancake mix for this one?! Not only did I grab a box of their delicious pancake mix, I also bought their maple BUTTER. It is a jar of maple syrup whipped into smooth, creamy perfection. I didn’t even use maple syrup for the pancake bites. I just spread some maple butter on each warm ball of pumpkin deliciousness. It was way more fun eating pancakes this way, enjoy!

The entire box of pancake mix can make at least 4 batches using the Instant Pot egg mold. If you don’t have an egg mold, you can use small ramekins for pancake bites as well or even silicone muffin liners.

**If you aren’t using this same boxed recipe I used from Trader Joe’s, then follow the box’s ingredients and directions to make the batter of the mix you are using. Once you make the batter to that box’s directions, proceed with my Instant Pot instructions.

Ingredients:

  • 1 box of Trader Joe’s Pumpkin Pancake Mix (box’s ingredients):

    • 3 cups of milk

    • 4 eggs, lightly beaten

    • 8 tablespoons of melted butter (1 stick)

  • Maple butter for spreading (Trader Joe’s) *optional

  • Maple syrup (or any desired toppings/syrups)


Instructions:

  1. Begin making the pancake batter according to the box’s directions. Set aside.

  2. Grease your Instant Pot egg mold with Pam, butter or oil.

  3. Fill each slot with the batter, stopping a little before the top so they aren’t filled all the way. Cover with foil or the silicone lid then place on the trivet. If you are using two egg molds, use mason jar lids to stack the trays on top of each other.

  4. Pour 1 cup of water into the Instant pot and then carefully lower the trivet into the Instant Pot.

  5. Lock lid into place, turn valve to sealing position then cook on high pressure for 5 minutes, natural release for 5 minutes.

  6. Let set for a couple minutes before popping out of the molds.

  7. Serve with maple butter, maple syrup or any topping desired.
