Air Fryer Potato Nuggets
If you are looking for a quick and comforting side dish, this is the one! This easy recipe gives you the yummy satisfaction as if you are indulging into a plate of French fries. The best part is, it feels that way without all the calories and unhealthy oils. Using baby potatoes make them fun and easy to eat. If you can’t find baby potatoes (sometimes called, new potatoes) then you can use small potatoes cut into halves. Also, be open to seasoning this potatoes to your liking. Use another type of herb if parsley isn’t your favorite. Sprinkle your favorite kind of seasoning salt to jazz it up a notch. My favorite substitution in this recipe for regular sea salt is truffle salt! Options can be endless, listen to your heart (by heart I mean tummy).

Ingredients:
1 pound of small, baby potatoes like New Potatoes or Fingerling
1 tsp salt
½ tsp black pepper
1-2 tbsp olive oil
Handful of fresh parsley, chopped
Instructions:
Clean potatoes, pat dry and place in a mixing bowl. Sprinkle with: salt, pepper, olive oil and parsley.
Toss with a spoon until they are evenly coated.
Preheat the air fryer for 3-5 minutes before cooking.
Place potatoes into the air fryer basket and cook for 15-20 minutes at 400. Toss halfway through.
After the time is up, remove potatoes from basket and serve warm.
