Key Lime Bites

I have planned recipes and snacks out for the week, which is super helpful while trying to stay on the right track for a healthy daily routine. Keeping it convenient is key! These bites were fast to make and easy to grab and go. I only had three for my snack today and it kept me full and satisfied for a while. It's not shown in my pictures, but I had also rolled some into chia seeds. You can also add some dark chocolate chips in there if you'd like or even shape them into bars instead of balls. Go ahead and give them a try!

Ingredients

  • 1/2 cup raw cashews

  • 1/2 cup raw almonds

  • 1 1/2 cups pitted dates

  • 3-4 key limes, zest and juice

  • *optional: shredded coconut, chia seeds, cocoa powder, chocolate chips

Instructions

  1. Place cashews and almonds in your Vitamix or food processor. Blend/pulse until finely chopped but NOT a paste.

  2. Add dates, lime zest and juice. Blend until dates are mashed and well combined.

  3. Remove and transfer into a mixing bowl to give a last stir and start rolling the balls out.

  4. You may then roll them into any of the optional toppings.
