Jalapeno Glazed Carrots

Glazed carrots are always a yummy side dish, but throw some jalapenos in there and they kick it up a notch! The sweet and spicy combination of jalapenos and honey is irresistible. A pot of glazed carrots can be easily done on the stove, but after this Instant Pot version, I loved how fast it was and how the carrots cooked perfectly. These make a great side dish for barbecue chicken, enjoy!

Ingredients:

  • 1 pound (16 oz.) bag of baby carrots

  • 3 tablespoons of butter

  • 1 jalapeno, sliced

  • 3 tablespoons of honey

  • Sprinkle of pepper

  • Pinch of salt

Instructions:

  1. Place carrots in steam basket, then into the Instant Pot with 1 cup of water. Cook on high pressure for 2 minutes, then quick release.

  2. Remove the basket with carrots and set aside. Pour out the water from the Instant Pot.

  3. Return the pot then press the saute mode. Start off on low. Once hot, add butter, jalapenos, and honey. Raise the heat on saute mode if needed, and stir melted and creamy. Jalapenos will be slightly tender.

  4. Mix in carrots, then toss well to combine. Press cancel to turn off the Instant Pot and transfer carrots to a serving bowl.

  5. Serve immediately.
