Pumpkin Patch Buffalo Chicken Meatballs

Buffalo chicken seems to be one of those menu items that gets everyone’s attention, especially at parties. This is such a cute and delicious dish to serve for a Halloween party. Meatballs are always an easy option for a party because you can make a batch and have them cook in the Crock Pot while you do other work. Plus, they make a great small bite for anyone to grab from the buffet table. You can get even more festive and serve the meatballs over a bed of lettuce to create more of a pumpkin patch look, then top with some plastic spiders for some spooky fun. If you are looking to double this recipe, you certainly can and they will all fit in a large 8 quart Crock Pot.

Ingredients:

  • 1 pound ground chicken

  • ½ cup bread crumbs

  • 1 tsp celery salt

  • 1 egg

  • 1 tbsp ranch dressing

  • 1 tbsp buffalo wing sauce (meatballs)

  • 1 cup buffalo wing sauce (sauce)

  • ⅓ cup ranch dressing (sauce)

  • 1 cup water (sauce)

  • Extra buffalo sauce and ranch for dipping

  • A few pretzel rods broken into 1-2 inch pieces

  • Small handful of fresh parsley leaves


Instructions:

  1. In a small saucepan over medium heat, bring 1 cup of buffalo sauce, ⅓ cup ranch and 1 cup of water to a simmer. Stir, remove from heat and set aside.

  2. Combine all the remaining ingredients into a medium sized mixing bowl. 

  3. Using hands, gently mix all together until well combined, being careful not to overwork.

  4. Pour the sauce from sauceman into your slow cooker.

  5. Begin rolling the meatballs. Grab a small handful of meat mixture and using both hands, roll into a ball then place into slow cooker. Continue until all the meat is used up.

  6. Cook on high for 4-5 hours or low for 6-7.

  7. Using a slotted spoon remove meatballs from the Crock Pot and onto a serving platter.

  8. If you would like extra sauce poured on top of the meatballs, combine some buffalo sauce and ranch to your liking and pour a little over each one. If not, you can keep the sauces served on the side for dipping.

  9. Press a piece of pretzel stick into each meatball to create the stems for each pumpkin.

  10. Then take a parsley leaf and place next to each pretzel stick to look like a vine off the stem of the pumpkin.
