Reuben Lettuce Wraps

If you’re trying to get back on carbs turning your favorite sandwiches into a lettuce wrap is always a great option. Try using a lettuce that will provide a big enough leaf to roll your ingredients up together tightly. I had made corned beef in the slow cooker and decide to turn the leftovers into a whole new meal the next day. These are quick and easy to assemble, enjoy!

Ingredients

  • ½ - 1 cup thousand island dressing

  • 2 cups sauerkraut, drained

  • ¼ lb. Swiss cheese

  • 1 head of iceberg lettuce

  • Cooked corned beef (CrockPot recipe below) or ¾ lb. of corned beef from the deli counter

Instructions

CrockPot Corned Beef:

  1. Pour a cup of water into the slow cooker. If you have beef broth or a dark beer, that works great too, it will add more flavor.

  2. Place corned beef brisket at the bottom of the slow cooker, fat side down. Sprinkle the seasoning from the packet it came with over top of the brisket.

  3. Cover and cook on high for 6 hours or low for 8.

  4. Once finished, remove from slow cooker and trim off the fat. You can do this step before cooking, however I like to keep the fat on while cooking to add more juice and flavor into the meat.

  5. Shred or tear apart the meat and set aside. You may spoon any of the juice from the slow cooker onto the meat while it sits.

Lettuce Wrap Assembly:

  1. Carefully tear apart the big leaves of lettuce from the iceberg head. Clean each leaf and set aside, pat dry with a paper towel.

  2. Drain the sauerkraut only, you do not need to rinse it. Make sure to really squeeze out any excess water before placing into the mixing bowl.

  3. In a small mixing bowl, combine drained sauerkraut and thousand island dressing. If you want more dressing you may add more (the amount I noted above).

  4. To assembly each wrap start with a single leaf. First lay out two slices of Swiss cheese. Then place a spoonful of the sauerkraut mixture and then the corned beef.

  5. Tightly start rolling the lettuce and tucking the sides in if need until you create a log roll.

  6. Continue process until you have used up your ingredients or created the amount of lettuce wraps desired.
