Baked Truffle Chicken Wings

Most of the time when you think of chicken wings, football and buffalo sauce come to mind, not this time. I made a simple dry rub and tried to incorporate the flavor of truffle into these wings for a tasty change. If you don’t have truffle salt or butter, you can switch them out for just regular or any versions you like best. Sometimes you can find a nice herb and garlic flavored butter at markets and grocery stores, that would be a lovely touch! If you’d like to add a little heat, add cayenne or chili pepper to your dry rub. Play around with seasonings and flavors you love, you’d be surprised how simple, yet delicious your own version of wings could be without being fried and drenched in sauce.

Ingredients

  • ½ tsp garlic salt

  • ½ tsp truffle salt

  • ½ tsp ground black pepper

  • ¼ cup olive oil

  • 2 tbsp fresh rosemary, chopped

  • 3-4 lbs chicken wings

  • 2 tbsp truffle butter, softened/melted


Instructions

  • Preheat oven to 400.

  • In a small bowl prepare your dry rub. Add: garlic salt, truffle salt, black pepper, fresh rosemary. Mix together, set aside.

  • To prepare your wings there are two spots you must cut through. Use scissors or a sharp knife. First, find the two joints, you should be able to feel the joint with your fingers, then slice right through each one. This will leave you with the tip, the drumette and the wingette. Continue cutting all the chicken wings. Place the drumettes and wingettes in a large mixing bowl. All the tips get thrown out.

  • Sprinkle the dry rub over the wings, then drizzle the olive oil. Using your hands, toss the wings as you rub the seasoning to coat the wings evenly. Set aside and wash hands.

  • Line a baking sheet with foil, then place a baking rack on the baking sheet. Using tongs, start placing the wings in rows on the rack.

  • Place in oven and cook for 1 hour. After the first 45 minutes, remove from oven and brush the softened/melted truffle butter onto each wing. Place back in oven for the remaining 15 minutes.
