Roasted Chicken & Pasta

If you are looking for something easy and affordable this is a great option. Using drumsticks or thighs are always an inexpensive route to take and everyone enjoys them. This recipe is so easy because it only needs a few simple ingredients to leave you with a very tasty, fall off the bone, chicken dinner the whole family will enjoy. A great combo with this chicken is spaghetti, and all you need to do is make the noodles and once they are done just shred the chicken off the bone and mix everything together in the juice from the baking dish. It's incredibly easy with an immense amount of juicy flavor!

Ingredients

  • 2 small sweet onions

  • 6 chicken drumsticks, skinless

  • 3 chicken thighs, skinless

  • 2 roma tomatoes

  • 6 cloves of garlic, crushed

  • chopped fresh parsley

  • salt & pepper

  • about 1/4 cup olive oil

Instructions

  1. Preheat oven to 400.

  2. Slice onions, wash and chop the tomatoes and parsley. Set aside. Make sure any fat from the chicken is removed.

  3. Arrange the chicken in a large baking dish. Add the onions, tomatoes, garlic and the parsley.

  4. Sprinkle with salt, pepper. Flip chicken and season the other side. Drizzle with olive oil and using your hands mix well and lightly massage seasoning into the chicken.

  5. Keep uncovered and place in the oven. Bake for 1 hour. After the first 30 minutes flip the chicken over to it's other side.

  6. Once finished, serve with rice, pasta, or veggies.

  7. *If cooking to make as a pasta dish: While the chicken is cooking, during the last 20 minutes boil your water and cook your spaghetti. When the chicken is done, shred the meat from the bones. Discard the bones. Save about 1/2 cup of the pasta's starch water and set aside. Drain the spaghetti. Use the shredded chicken, onions, tomatoes, and all the juice from the baking dish to pour over the cooked spaghetti. Use the reserved pasta water if it seems to be too dry. Mix well to combine and sprinkle in some grated Parmesan cheese. Serve immediately.
