Chicken and Zucchini Noodles
Here is a simple recipe you can put together in minutes filled with flavor, vitamins and protein. Shown in the pictures as well as my ingredient list, it will create a single serving. Sometimes you are just cooking for yourself and don't want to prepare a huge dinner. I like this recipe because it is like you prepared a complete meal without all the trouble of clean up or leftovers that may go bad. That way you are satisfied with a actual dinner rather than a bowl of cereal or whatever is laying around because you don't want to bother to cook for yourself. This was super simple when I made it because I did have cooked chicken leftover, so I used that for my shredded chicken. Use whatever you have as a protein. If you don't have leftover chicken to use maybe add a handful of cannellini beans instead. I happened to have mascarpone cheese in the refrigerator so I added a little of that for an extra creamy and buttery taste. If you don't have it don't worry, just an extra drizzle of olive oil, coconut oil or some butter works too! Make sure to be generous and sprinkle on that parmesan cheese to complete that buttery, cheese flavor in every bite!
Ingredients
1 cup of already cooked chicken (cut up or shredded)
1 zucchini (in ribbons or cut julienne)
1/4 cup mascarpone cheese
3 cloves of garlic (roughly chopped)
1 teaspoon of crushed chili pepper
2 tablespoons of olive oil
salt and pepper
Parmesan cheese
Instructions
Clean the zucchini, use a mandolin for julienne cutting (BE CAREFUL) or a potato peeler to slice it into ribbons. Set aside.
Heat a large pan and add 1 tablespoon of the olive oil. Then add garlic and crushed red pepper. Sauté for a minute.
Add zucchini and the cup of your cooked/shredded chicken to the pan. Stir everything together and sprinkle with salt and pepper. You may drizzle a little extra olive oil if you think it seems dry. Cook for about 2 minutes.
Add the mascarpone cheese. Cook and stir until all the cream melts and creates the sauce.
Sprinkle parmesan cheese and stir to combine.
Transfer to plate and grate some more cheese on top.
