Naked Chicken Tacos

Taco Tuesday is always a fun addition to any household. Instead of packing on the sour cream, ground beef and all the tortillas, try a healthier version. Use chicken breast, veggies and guacamole. Choose any toppings you like. I made caramelized onions too, so instructions for that is in here as well. If you aren't planning to cook your onions, skip those ingredients and steps.

Ingredients

  • Lettuce for wraps- iceberg, romaine, or boston butter lettuce work nicely

  • 1 cup shredded cheese

  • 3 roma tomatoes, diced

  • 1 yellow onion, sliced

  • 2 chicken breasts, fat trimmed and clean, cut into really small pieces

  • 3-4 tablespoons olive oil

  • drizzle honey

  • 1 package taco seasoning

  • 1 cup guacamole

  • salt and pepper

Instructions

  1. Slice your onions and heat a small pan over medium with olive oil. Add the onions to the pan, season with a sprinkle of salt and pepper. Lower heat to medium-low.

  2. Stir onions occasionally. In the meantime, have your chicken cleaned and diced up.

  3. After your onions have cooked about 20 minutes, add a drizzle of honey and cook for another 5-10 minutes.

  4. The chicken takes about 10 minutes or so to cook. Heat a large pan over medium heat with about 2 tablespoons of olive oil.

  5. Once hot, add the chicken, sprinkle about 1/2 or more of the seasoning all over the chicken and add about 1/4 cup of water to the chicken. Give a nice mix to combine and let cook until chicken is done, stirring occasionally.

  6. Once chicken is finished cooking, remove from heat and serve with the toppings and lettuce.
