Mojito Chicken
This is a fun recipe! You can play around and use either cilantro or mint, they both would compliment this dish equally delicious. I used mint to get the full package of the mojito flavors and I am glad I did, it was such a tasty, fresh punch of flavor! So play with whatever you like!
I had dried jalapenos that I ground up and used that to also season my chicken. If you like spice this was a great touch. If you don't have ground jalapeno powder adding fresh jalapenos would be a great addition as well. You can substitute mint leaves for cilantro as well.
Ingredients
4 chicken breasts
1 medium yellow onion
mint leaves
3-4 limes
salt and pepper
6 cloves of garlic
olive oil
1/2 can light beer (you can use some white wine or chicken broth instead)
Instructions
Clean and trim fat off chicken, season with salt and pepper on both sides.
Heat a pan on medium and add about 2 tablespoons of olive oil, enough to coat entire bottom of pan.
Add chicken to the pan and cook for about 2 minutes and turn over for about another 2 minutes.
Then top with sliced onions, minced garlic and a small handful of ripped mint leaves.
Now add your liquid (beer, broth, or wine) and squeeze one lime and leave halves in the pan.
Partially cover pan with the lid, lower heat a little (med-low) and cook for about 35 minutes, flipping the chicken have way through.
Using two forks, start to pull apart and shred the chicken. If it does not pull apart easily it is not ready so cover again and cook a little longer until you can shred it easily. Press the lime halves to release any more juice and then remove the lime halves and throw them out.
Once you get all the chicken shredded, leave uncovered and cook another 5 minutes on low, stirring occasionally (to combine all the juices and it will evaporate/thicken just a little) You may add more salt if need.
Turn off heat, cut another fresh lime, squeeze more juice and place the halves in the pan again. Add a few more fresh (ripped/chopped) mint leaves and serve.
Serve over brown rice for a complete and healthy meal. Enjoy!
