Meyer Lemon Sorbet

Using a Meyer lemon gives this sorbet the perfect combination of tang and sweetness. While your typical lemon has a more sour and tangy taste, Meyer lemons are on the sweeter side. This sweet, cold and refreshing treat will definitely be a crowd-pleaser for all ages! I can imagine it now on a hot summer day!

Ingredients

  • 2 cups of sugar

  • 1 3/4 cups water

  • 2 cups freshly squeezed lemon juice

  • zest of 2 lemons

Instructions

  1. In a medium sized sauce pan, boil the water and sugar until the sugar is completely dissolved. About 5 minutes, then remove from heat and cool completely.

  2. Once your simple syrup is cooled, mix in the lemon juice and lemon zest.

  3. Pour into your ice cream maker and follow manufacturers instructions. Usually, you run your machine for 15-20 minutes.

  4. Unlike making ice cream, once the 20 minutes is up, the sorbet will not be a solid. It will just have crystallized. Transfer to a freezer safe container and freeze for the day or overnight until it forms a solid and is ready to be served.
