Baked Lemon Chicken

I love making chicken this way because it is so easy and healthy with also lots of flavor. Sometimes I add chunks of zucchini, onions, baby carrots, or potatoes. Always comes out great, serve over brown rice or quinoa to soak up the yummy juice it creates.

Ingredients

  • Chicken breasts (2)- trimmed of fat

  • 1 lemon (zest and juice)

  • About 1/3 cup of white wine or chicken broth

  • 1 1/2 tablespoons of olive oil

  • Minced garlic, 2-3 cloves

  • Salt and pepper

  • Dried oregano

  • Fresh thyme

Instructions

  1. Preheat oven to 425 degrees F.

  2. Place chicken in baking dish (if you add any vegetables, place around/top of chicken).

  3. In a separate bowl, mix: wine or brother, olive oil, garlic, salt, pepper, herbs, lemon zest, lemon juice. Whisk together and pour over top of chicken (or chicken and vegetables).

  4. Cover with foil and bake for 25-30 minutes.
