Chicken Tortilla Soup

I made this in the slow cooker and it came out fabulous. It's light and healthy with lots of fresh flavor. The best part is adding any toppings you'd like before you dive into this comforting bowl of soup!

Ingredients

  • 3-4 boneless, skinless chicken breasts, fat trimmed

  • 1 can of sweet corn

  • 1 can of black beans

  • 1 jalapeno, seeds removed and diced

  • small can diced tomatoes, with green chilies

  • 1 small container of salsa

  • 5 cups chicken broth

  • chili powder

  • ground cumin

  • paprika

  • salt & pepper

  • cilantro

  • Taco seasoning instead of your own spices

  • Limes

Instructions

  1. Season chicken with salt and pepper on both sides.

  2. Place chicken on the bottom of slow cooker side by side, so they don't overlap.

  3. Top chicken with can of tomatoes, diced jalapenos, corn, beans, salsa and chicken broth. Add some taco seasoning or your own seasoning- salt (not too too much, the broth has some already too), pepper, cumin, paprika, chili powder- to your preference.

  4. Cook on high for 4 hours or low for 5-6 hours

  5. When done cooking, shred chicken and give a stir.

  6. Serve in bowl, squeeze lime juice and top with cilantro, tortilla chips, avocado, shredded cheese and sour cream.
