Jalapeno Mac and Cheese Burrito

Well this was a fun one! To be honest with you I had the urge to put some type of pasta in a burrito, I know weird. While I am on lunch duty in our school's cafeteria, I  observe the students create things like spaghetti in wraps and packing in the shredded cheese, ha ha, I KNOW! What ends up pleasing children at lunch can sometimes be a little bizarre but at the same time, they are some good inspiration. So I've been trying to brainstorm something that would at least be somewhat appealing to an adult. I think using macaroni and cheese to stuff into a burrito was a good choice. I used fresh jalapenos, cheddar and pepper jack cheese to make it feel a little bit more "Mexican" burrito inspired. I had a great taste tester with me while I played and he approved! So when you're in the mood for something fun and different, give this a try. Hopefully you enjoy it as much as we did! :)

If you are looking for a meat to add into this burrito, I say some chorizo or bacon in here would be amazing!

Ingredients

  • 2 cup shredded sharp cheddar cheese

  • 8oz. block of pepper jack cheese, shredded or cut into cubes

  • 4 cups of milk

  • 1/2 cup flour

  • 6-8 tablespoons butter

  • 1lb pasta, elbow noodles

  • 1/4 teaspoon cayenne pepper

  • 1/4 ground black pepper

  • 1/4 teaspoon salt

  • 2 fresh jalapenos, diced

  • Large flour tortillas

Instructions

  1. Fill a pot with water for your pasta, you won't need to turn the heat on yet. Just have it ready.

  2. In a pan with high sides or a pot, heat on medium, melt the butter. Once it starts to bubble add the flour and stir for about one minute. Then start adding the milk as you are whisking constantly while it cooks. Do this until the mixture thickens and lightly bubbles.

  3. Start boiling your water, make sure to salt the water once you put the pasta in.

  4. Lower the heat with the milk mixture, keep on low, add the cheeses and the cayenne, ground pepper and salt. Slowly stir as the cheeses melt. Once your cheese sauce is done, remove from heat, cover and set aside.

  5. Finish cooking the pasta, drain then add the noodles to the cheese sauce. Stir to combine. Your macaroni and cheese is done. You can serve as is or fill tortillas to make a burrito. Heat a nonstick skillet over medium heat, add 1-2 tablespoons of butter to melt.

  6. Using a large tortilla, place some of the pasta in the center, fold edges in and roll your burrito up. Once the pan is hot and butter is melted, place the burrito on the pan seam side down. Cook on that side for maybe a minute. Until it is golden, then flip to other side, press down lightly. Once that side is golden and crisp, remove from pan and serve immediately.
