Chickpea & White Sweet Potato Hummus
The sweetness from the sweet potato gives this hummus a nice touch. I have been using white sweet potatoes a lot lately and I absolutely love them! I recommend giving them a try. Sometimes they are hard to find, but I have had luck finding them at Greenwise Publix. Keep an eye out for them next time you're shopping.
Ingredients
1 14oz can of garbanzo beans
1 white sweet potato
3 cloves of garlic
2 tablespoons of olive oil
fresh squeezed lemon juice of 1 lemon
salt and pepper
Instructions
Peel and clean sweet potato, cut into a few chunks and boil until soft. Drain and set aside to cool.
Strain can of beans and add to Vitamix or food processor.
Add all the other ingredients and pulse a few times until it becomes a consistency you like.
I add a few splashes of water so it isn't as thick, add water as needed.
Once you transfer to a bowl, you can drizzle some more olive oil and sprinkle freshly cracked black pepper.
