Avocado Lime Hummus

Here's another quick Vitamix creation. Hummus is a staple item in my fridge. I usually have carrots or mini bell peppers on hand as dippers for a quick and healthy go-to snack. Grocery stores always have a great selection to choose from but making your own is always healthiest and of course fun because you can be so creative with it. This one I made is sort of like having a hummus guacamole combo. The flavors are just fantastic together. Hope you like it!

Ingredients

  • 1 avocado

  • 1 can of chickpeas (drained)

  • 2 limes for fresh lime juice

  • 1 jalapeno (if you like spicy)

  • olive oil, about 2 tablespoons

  • garlic, about 3 cloves

  • salt and pepper

Instructions

  1. Using a Vitamix or food processor, add these ingredients to the canister: avocado, drained chickpeas, juice of one lime, jalapeno (remove stem and seeds), 1 tablespoon of olive oil, garlic, salt and pepper.

  2. Blend until well combined at a smooth consistency. You may add a little water if you need to thin it out some.

  3. Remove from canister and top with a drizzle of more olive oil and lime juice. I added red pepper flakes for some extra zest.
