Skinny Orange Chicken

Once you get the hang of recreating your favorite dishes at home, you’ll realize how easy it actually is, not only that, it’s seriously so much better for you as well. Unless you are trying to load up on it, home cooked meals contain way less sodium and greasy fats than most restaurant and takeout options. This orange chicken can be whipped up effortlessly and is a great option for recreating a healthier orange chicken dish. The flavors are so fresh and strong, you’ll be completely satisfied yet feel light and content.
Ingredients:
1-2 lbs chicken breast, cut into bite sized pieces.
2 tbsp olive oil
Sprinkle of salt and pepper
1 tbsp cornstarch
2 cloves of garlic, minced
2 tsp ginger, minced
Zest of 1 orange
Fresh juice from orange, about ¼ cup or so of its juice
¼ cup liquid aminos
¼ cup honey
¼ chicken broth
1 tsp red pepper flakes,
2 tsp sriracha
Optional garnishes: freshly chopped scallion and toasted sesame seeds
Optional pairing: serving over brown rice and roasted broccoli
Instructions:
In a small mixing bowl whisk together: honey, chicken broth, liquid aminos, orange juice and zest, sriracha and pepper flakes. Set aside.
Have chicken cut into bite size pieces, set aside.
Heat 1 tablespoon of olive oil in a large pan over medium heat. Once hot, add the chicken, sprinkle with a little salt and pepper, cook until the chicken is no longer pink and cooked through, about 8-10 minutes. Then remove from the pan onto a plate, set aside.
In the same large pan, drizzle another tablespoon of olive oil then add the ginger and garlic. Lightly saute, you can lower the heat a little to prevent them from burning. After about 2-3 minutes, pour your liquid mixture over the garlic and ginger.
In a small cup mix together the cornstarch with 1 tablespoon of cold water, mix well, then slowly whisk into the hot sauce in the pan. The sauce will start to thicken.
Add the chicken back to the pan to toss and coat well. Then remove from heat.
Serve chicken and juice over rice and broccoli, garnish with scallions and sesame seeds if desired.
