Espresso Brownies

Brownies from scratch are actually incredibly easy to make at home. I find them to be a much simpler process than creating a cake or cookies from scratch. Coffee brings out rich flavors in chocolate and besides the point, they are a magical duo! My favorite local coffee shop in the Miami area is Panther Coffee. They are a neat little establishment and at their Wynwood location you can see their fantastic setup of their coffee bean roasting. Besides swinging by there for a nitro cold brew, I love picking up their coffee beans for my French press and espresso stovetop pot. With this recipe, I learned their finely and freshly ground espresso beans not only make great espresso but I think an even better brownie! The intense, rich sharpness from their espresso bean explodes with flavor in each brownie bite.

Ingredients:

  • 10 tbsp unsalted butter

  • 1 cup dark chocolate chips ( 6oz.) (plus more if you want extra on top)

  • ⅔ cup all purpose flour

  • ½ tsp salt

  • 1 ¼ cup granulated sugar

  • 3 eggs

  • 3 tbsp cocoa powder

  • ¼ cup finely ground espresso beans

Instructions:

  1. Spray an 8x8in baking dish then set aside. Preheat the oven to 350.

  2. In a small mixing bowl add: flour, cocoa powder and salt. Stir to combine and set aside.

  3. Use a double boiler, or fill a medium sized saucepan with water halfway, then place a glass bowl on top without letting it touch the water. Regardless of the method you use, add the butter and chocolate, then heat and stir until it is melted and combined.

  4. Once completely melted, remove from heat then stir in sugar and ground espresso, stir until it is completely mixed together.

  5. Add one egg at a time, stirring completely in between each egg. Then add the flour mixture and stir just until it is combined, do not over mix!

  6. Pour batter into your prepared dish. If you’d like it extra chocolatey, you can sprinkle some more chocolate chips over the batter. Bake for 30-35  minutes, depending on how undercooked or fudge-like/gooey you want your brownies. Let them cool for about 30 minutes before cutting and removing from the baking dish.
