Easter Brownies

This brownie recipe is deliciously fudgy! You can use your favorite brownie batter recipe or simply use a box recipe. My favorite boxed brownie mix is Ghiradelli. If you’re using a boxed brownie mix, make sure you have the ingredients on the box and follow the box's directions. Otherwise, use this recipe I have listed below. The main brownie part of this recipe comes from one of my Pinterest favorites. I have retyped the recipe in my own words and the Easter additions are my own festive twist, but the original recipe I found to create my brownie batter comes from Cafe Delites.

Ingredients:

  • 2 sticks (1 cup) butter, melted and cooled

  • 2 tbsp vegetable oil

  • 1 ¼ cup white sugar

  • 1 cup packed light brown sugar

  • 4 eggs, room temp

  • 1 tablespoon vanilla bean paste or extract

  • 1 tsp salt

  • 1 cup all purpose flour

  • 1 cup Nestle unsweetened cocoa powder

  • Cadbury Easter chocolate eggs

  • Marshmallow bunny peeps

Instructions:

  1. Preheat the oven to 350. Line a baking dish with parchment paper. Then set aside.

  2. In a small mixing bowl, add: flour, salt, and cocoa powder. Whisk together until combined, set aside.

  3. In a large mixing bowl, combine: butter, oil, and sugars. Whisk until well combined. Add the eggs and vanilla and beat for another minute.

  4. Fold the dry mixture into the wet mixture. Fold just until combined. Do not over mix. Over mixing brownie batter will create too much air and the brownies will have a more cake like texture once baked. 

  5. Pour batter evenly into the lined pan, then sprinkle the remaining chocolate chips overtop of the brownie batter. Sprinkle the chocolate eggs over the batter and place a few marshmallow peeps into the batter.

  6. Place in the oven and bake for 25- 30 minutes, or until the center is firm and does not jiggle. If you want your brownies to be more cooked, you can bake another 5-10. The baking time will really depend on the size pan you are using. So, pay attention to the batter in the oven. Once you start to smell the brownies they are getting really close to being done. If you stick a toothpick in the center of the brownies, it should come out a little dirty for a fudgy brownie. Let brownies cool before cutting and serving.
