Healthier "Bloomin Onion"

Enjoy one of your favorite restaurant appetizers guilt-free. In my version of a “Blooming Onion” I use Italian bread crumbs instead of a breading batter. This helps keep it lighter. It won’t have the same breading crust you are used to but it will give it just enough of a crispy texture. To complement the Italian bread crumbs, I garnish with parmesan cheese and fresh parsley, then pair it with an Italian inspired yogurt dipping sauce. Not quite the down under flavors, but some would say these are better! Remember, this version is meant to be a healthier style, so then it gets popped into the air fryer for a healthy alternative to deep frying to get the golden, crispy outcome without all the oil.

Ingredients:

  • 1 or 2 large sweet onions

  • 1 cup Italian breadcrumbs

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tablespoon paprika

  • 2 eggs

  • ¾ cup milk

  • Optional garnish: fresh Italian parsley, grate parmesan cheese

  • Dipping Sauce:

    • 1 cup plain Greek yogurt

    • 1 lemon or white vinegar

    • 1 tablespoon Italian seasoning

    • 1-2 tsp grated parmesan cheese

Instructions:

  1. Prep the onion. Don’t cut the side that holds the onion all together, make sure to leave that be. Slice a small part of the top (opposite side of that root that holds it intact), then peel off the skin. Flip over and begin to make slits all around. Then flip over again to let it “bloom.” (See Photo)

  2. Prep two large bowls. Bowl one- whisk together egg and milk. Bowl two- combine: breadcrumbs, salt, pepper, paprika.

  3. First completely dredge the onion in the egg mixture then lift the onion, letting the excess egg mixture drip off, then add to the breadcrumbs. Lightly cover the onion in the breadcrumb mixture, then set aside.

  4. Preheat the air fryer to 400 for 3-5 minutes. Then give the basket or tray a spray with oil. Carefully transfer the bloomed onion to the air fryer. Generously spray the onion with oil then cook for 10-15 minutes. You can check on it halfway and spray more oil if you feel like it needs to be more crispy or golden.

  5. While it is cooking, whisk together your dipping sauce. Keep dipping sauce refrigerated until ready to serve.
