Sausage Noodle Soup

We are all familiar with the beloved chicken noodle soup, so why not try some other variations? Creating a comforting bowl of sausage noodle soup is fun because you can choose from many different types of sausage from your local grocery store. You can find flavors like sun-dried tomato chicken sausage, to your tradition spicy Italian sausage. I love how you can use any type you’d like! In this recipe I used spicy Italian sausage for an extra kick, but like I said, feel free to use the sausage of your liking.

Instructions:

  • 1 tbsp olive oil

  • 1 lb. hot Italian sausage, meat removed from casing

  • ½ sweet onion, chopped

  • 3 large carrots, chopped

  • 2 celery stalks, chopped

  • 2 cloves garlic, smashed

  • 1 tsp dried thyme

  • ½ tsp ground black pepper

  • ½ tsp salt

  • 8 cups broth, (chicken or veggie) Try my Easy Homemade Instant Pot Chicken Broth !

  • 1 cup uncooked ditalini pasta

  • *optional- rind of parmesan or pecorino cheese

Instructions:

  1. Press saute on your Instant Pot, drizzle with olive oil. Once hot, add the sausage filling to the pot. Use a wooden spoon to break up the sausage meat as it browns.

  2. Once the sausage meat is cooked, press off. Add carrots, celery, garlic, thyme, salt, pepper and broth into the Instant Pot.

  3. HP 4 minutes

  4. Quick release, turn to saute

  5. Add pasta and cheese rind, cook until pasta is al dente, about 4-5 minutes
