Deep Dish Polenta

If you have leftover polenta, this is incredibly fast and easy. If you don’t want to spend the time making your own polenta from scratch, I’ve seen pre-cooked polenta on the shelves at some grocery stores. Using ceramic or other oven safe ramekins, or even a muffin tray works great for these individual polenta bowls. You can always use a casserole dish if you have a lot of polenta and rather bake it in one big dish. Easy for kids to help assemble and enjoy!

Ingredients:

About 4 cups of cooked polenta

1 cup marinara sauce

1 cup shredded mozzarella

¼ cup sliced basil

Olive oil

Optional garnish: chili flakes, parmesan cheese, fresh basil

Instructions:

  1. Preheat oven to 375.

  2. Grease each with olive oil. 

  3. Spoon about ½ a cup or so of polenta into each ramekin.

  4. Place about a tablespoon or so of sauce on top of the polenta, then sprinkle some mozzarella and basil over top.

  5. Bake for about 10-15 minutes, until center is hot and cheese is melted.

  6. Garnish with more fresh basil, chili flakes and freshly grated parmesan cheese.

  7. Serve right away or turn off the oven and keep inside to stay warm until ready to serve.
