Instant Pot Chicken Breasts
To be honest about chicken breasts in the Instant Pot, I have mixed feelings. When it comes out right, it will be the juiciest chicken breast you’ll ever taste. However, sometimes it’s tricky because the size of the breasts vary and I didn’t realize how much this changes the factors of using the Instant Pot. I like this recipe because by keeping it simple it’s consistent. I’ve found that if you do this recipe with more than two breasts, the cooking time changes, sometimes even the natural release time too. So to keep things easy when I want chicken breasts in the Instant Pot, I only use two and I make sure to pay attention if they are on the thinner or thicker side.

Ingredients:
2 boneless, skinless chicken breasts (unfrozen or frozen)
1 cup chicken broth
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp onion powder
½ tsp garlic powder
½ tsp coriander
½ tsp dried oregano
½ tsp dried thyme
Instructions:
Make sure chicken is trimmed of fat, place on a plate and set aside.
In a small bowl, mix together all the seasoning to combine.
Drizzle the olive oil over the chicken, then evenly sprinkle all the seasoning over both sides of the chicken. Set aside.
Press saute on your Instant Pot. Once the pot reads hot, place the chicken on the bottom of the pot. Cook for about 1-2 minutes (depending on the thickness of the breasts) on each side to brown both sides of the chicken.
Once the chicken has been seared on each side, remove with tongs and place on a plate, set aside.
Pour chicken broth into the pan to deglaze any of the brown bits stuck to the bottom. Use a wooden spoon or spatula to break up the bits from the pan.
Now, place the rack that came with your Instant Pot inside the pot. Place the chicken on top of the rack.
Put the lid on and lock into place. Make sure the steam nozzle is turned to sealing. Press pressure cook (high pressure) and set timer for 5 minutes. *If the chicken breasts are frozen, set under pressure time for 10 minutes.
Once time is up, let it naturally release pressure for 8 minutes. If they are very thick breasts, give them 10 minutes. Then do a quick release, open and remove lid.
Serve chicken over rice, salad or veggies.
