Chia Seed Pudding

Breakfast on the go seems to be important to many of you out there. Something like this overnight chia seed pudding will make your mornings much easier! This also makes a great, light and healthy snack. Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.
Ingredients:
¼ cup chia seeds
1 cup milk (vanilla or chocolate almond, plain, oat)
Fresh blueberries (or another berry)
Cacao nibs (or chocolate chips)
Honey
Bee pollen *optional (found at Whole Foods)
Instructions:
Place chia seeds into a glass container or a mason jar.
Pour in the milk of your choice and cover. Refrigerate overnight.
Once you are ready to eat the pudding in the morning, use a spoon to stir up the seeds, add a splash or two of more milk if it’s too thick.
Top with desired toppings: fresh berries, cacao, bee pollen. Drizzle with honey to add sweetness.
