Strawberries n Cream Crepes

If you’re a tennis fan, you’re familiar with one of the four grand slam tournaments named, Wimbledon. If you’re familiar with Wimbledon, you know it’s all about tradition. This  prestigious tennis tournament, that also happens to be one of the oldest in the world, has many traditions. One being it’s, “Strawberries and Cream.” You can find yourself on the grounds of the Wimbledon Championships enjoying a simple bowl of fresh strawberries bathing a bowl of sweet cream. This recipe is inspired by the traditions of Wimbledon along with a fun twist rolling it up in crepe. I’d say the strawberries and cream met their match. 

Ingredients:

  • 1 pound strawberries, cleaned and chopped

  • 10-12 crepes (premade)

  • 10-12 oz. plain Greek yogurt

  • 1 teaspoon vanilla bean paste (or extract)

  • ½ cup evaporated milk

  • ¾ cup sweetened condensed milk

  • Optional- whipped cream


Instructions:

  1. Mix together in a medium sized mixing bowl: yogurt, vanilla, and both milks. Whisk together until smooth without any lumps. Cover and keep in the fridge until you’re ready to use it.

  2. Clean and cut your strawberries, set aside.

  3. Either make your favorite homemade crepes or purchase a package of crepes usually found in your produce department.

  4. Lay one crepe on a plate. Place a handful of chopped strawberries in the center and drizzle one tablespoon of the cream mixture over top. Carefully roll up the crepe to hold everything in. Continue to fill each crepe. Then finish with a final drizzle of cream and strawberries over the platter of filled crepes. You may top with whipped cream for an additional garnish.
