Italian Tuna Salad

Not everyone is a fan of tuna, but if you are please try this simple and light, flavorful salad. Tuna fillets jarred in olive oil is used often in Italy. There, it is common for at home cooks to use this tuna in pastas, which you don’t see often in the states. So that might sound strange to you, but it is actually good! One of my favorites is when they simply add it over salad with some fresh lemon and olive oil. My recipe here is inspired with ingredients and flavors I’ve collected while enjoying countless meals in Italy where tuna, “tonno,” was present with my salads.

Ingredients

  • 1 jar tuna fillets in olive oil

  • 1 bag of mixed greens

  • 1 lemon

  • Olive oil

  • Salt

  • Black pepper

  • 1 can sweet corn, drained and rinsed

  • Few caperberries to garnish

Instructions

  1. Place mixed greens into a salad bowl.

  2. Drain and rinse corn, then toss it over the greens.

  3. Remove tuna fillets from the jar and place over salad.

  4. Drizzle olive oil overtop, sprinkle with salt and pepper, squeeze the juice of one lemon over the salad, garnish with lemon wedges and caperberries.

  5. Toss to combine and serve.
