Chicken & Kale Sausage Stew

If  you are looking for something hearty and healthy, this is a terrific recipe just for that. It is also super easy and fast. The sausage adds so much more flavor and all the juice from the tomatoes and vegetables make a lovely sauce to soak up with some toasted Italian bread or serve over a grain. I served this over farro, an Italian grain that is high in fiber, protein and iron.

Ingredients

  • 1 cup farro

  • 6 scallions, sliced

  • 1 yellow bell pepper, chopped

  • 6 stalks of celery, sliced

  • 3 gloves of garlic, chopped

  • handful of Italian parsley, chopped

  • 6 sausage links (any of your favorite kind, I used chicken and kale sausage) sliced in half

  • 1 1/2 cups marinara sauce (plus cup of water)

  • 2 tablespoons olive oil

  • crushed red pepper flakes

  • salt and pepper

Instructions

  1. Cook farro according to the package, keep warm and set aside until needed.

  2. In a large pan with high sides, heat olive oil and crushed red pepper over medium-low heat. Add the scallions, begin to sauté for a couple minutes, then add the garlic. Stir and sauté another minute.

  3. Turn the heat up to medium, add the sausage to the pan and cook just a minute or two per side (turning), to brown all sides.

  4. Once all sides are brown, add the celery, bell peppers and parsley. Sprinkle with salt and pepper. Stir and saute for a couple minutes before adding the marinara sauce. Use the same cup the sauce was in to fill with a cup of water. Add to the pan, give a stir to combine.

  5. Cover (with lid letting out just a crack of air), turn heat to low and cook for 30 minutes. Stir halfway through.

  6. Serve over cooked farro.
