Cheesy Baked Chicken

Throwing chicken breasts in the oven are so easy and fast. I have had baked chicken on here before, but this time I threw on some tomato sauce and cheese. This goes great with some rice, pasta or crusty Italian bread. Anyone can put together this simple, flavorful and fast chicken dinner in just a few easy steps:

Ingredients

  • 2 chicken breast- cleaned and trimmed of fat

  • tomato sauce- about 1- 1 1/2 cups for the chicken, then about another 1 1/2- 2 cups for your pasta, rice or any extra you are putting on top for dipping bread

  • salt and pepper

  • pasta, rice or crusty Italian bread

  • grated parmesan or pecorino cheese, for sprinkling

  • shredded mozzarella cheese, about a handful

Instructions

  1. Preheat oven to 425.

  2. Add chicken to a baking dish and season with salt and pepper. Cover the chicken with tomato sauce then sprinkle on your cheeses evenly.

  3. Cover the baking dish with foil and bake for 35 minutes.

  4. While the chicken is cooking, boil water for your pasta or prepare your rice.

  5. Serve chicken on a plate with the side you choose, use the extra sauce (not from the chicken's baking dish) to use on your pasta, rice, or whatever extra you wanted for bread.

  6. Sprinkle on more grated cheese.
