Whole Wheat Pasta with Chicken & Veggies
Here is a quick pasta dish filled with flavor and healthy nutrients! Get all your prep work done, then start boiling the water for pasta. Begin cooking your chicken and veggies, by the time they are done the pasta will be finished and your meal is complete. Also, you can choose any pasta you like. I prefer just regular pasta noodles over any, but whole wheat is always a nice healthy swap. Give this a try it's super fast, easy, healthy, and tasty!
If you are trying to stay on the healthier side the whole wheat pasta is a nice choice. I personally will choose regular pasta though :) So you can go ahead and do this same recipe with any type of pasta you like.
Ingredients
1 lb. whole wheat penne
3 tablespoons olive oil
2 chicken breasts, cleaned and fat trimmed- cut into small pieces
1 head of broccoli, cleaned and cut into small pieces
1 red bell pepper, sliced
1/2 yellow onion, sliced
4 cloves of garlic, chopped
1/2 cup pasta water
salt and pepper
dried oregano
1-2 tablespoons balsamic glaze or vinegar
parmesan cheese
Instructions
Have your chicken cleaned, cut, sprinkled with: salt, pepper, oregano. Set aside.
Start boiling your pot of water.
In a large pan, heat over medium. Drizzle 2 tablespoons of olive oil and add the sliced onion, cook for about 2 minutes.
Add the chicken and garlic. Cook stirring occasionally for about 4 minutes, until all the edges have most of the pink gone.
Add the broccoli and bell peppers. Sprinkle with salt and pepper, then drizzle the remaining tablespoon of olive oil and the balsamic. Give a nice stir to combine, then lightly cover the pan with the lid and lower the heat a little.
Let the veggies and chicken finish cooking this way for about another 2 minutes. Then turn off heat.
By then the pasta will be done also. Scoop about 1/2 a cup of the pasta water out and set aside.
Drain the pasta, add the pasta to the pan with the chicken and veggies. Pour the pasta water over top and mix to combine well.
Serve immediately and sprinkle parmesan cheese over top.
