Spicy Sirloin Salad

So this sort of came together randomly and unplanned, but it then turned into an amazingly delicious, healthy dinner. Also, it probably only took about 15 minutes to chop the veggies, cook the steak and put it all together. If you are looking for something healthy without much effort, marinate a steak (or chicken breast) and have veggies on hand. Throwing together a hearty salad like this is so satisfying, very healthy, and super fast to make. It is a great week night dinner.

Ingredients

  • sirloin steak, sliced into strips

  • olive oil

  • 2 tbs soy sauce

  • Sriracha

  • Lawry's seasoning salt

  • 3 limes

  • freshly ground black pepper

  • salt

  • SALAD: use what you like- cucumbers, tomatoes, red onions, red bell peppers, leafy greens

Instructions

  1. Have your steak marinating- drizzle some olive oil and sirracha. Add soy sauce and sprinkle on some seasoning, give it a nice rub and let sit overnight or at least an hour. (covered in fridge, let sit for 30 minutes to get to room temp. before cooking)

  2. Prepare you salad veggies- Wash and cut any veggies you will like to be using. Assemble salad, sprinkle with salt and pepper, drizzle some olive oil and set aside.

  3. Heat skillet to medium. Once hot add the steak strips. Drizzle a little more sirracha and squeeze two limes over the steak while it cooks.

  4. Stir/flip steak around pan to make sure it cooks evenly, only a few minutes.

  5. Once done, add the steak with the pan juices to the salad. Squeeze on some more fresh lime juice. Lots of lime juice :)
